Saturday Snack Attack

I am in love! 
Twelve years of gentle pleading with my other half has finally paid off and we are now  the proud parents of a 15 month old staffie pup. She is exceptionally beautiful but also a massive distraction meaning everything takes twice as long to do. Consequently this weeks recipe is a simple, robust and tasty snack. Panini’s are quick to make and good to eat anytime, I particularly like them as a late night snack curled up on the sofa. Mmmmm…..

Serves:  Two
Effort Level: Easy

Ingredients:
1 plain ciabatta loaf
1 can tuna in sunflower oil
1 spring onion
1 tsp Delicias baby capers
2 tbsp Hellman’s Mayonnaise
1 tbsp Olive oil
100g Cheddar or hard goats cheese (St Helen’s farm or Soignon Tomme Dechevre)
5 cherry tomatoes

Equipment:
1 small mixing bowl
Tin opener
Tablespoon
Bread board and bread knife
Scissors
Cheese grater

Slice the ciabatta loaf in half lengthways. Scoop out some of the dough so you have plenty of room to add a healthy amount of filling. Place the ciabatta under a medium grill crust side up

Drain the tuna of oil and place in a small bowl. Add 2 tbsp mayonnaise, 1 tbsp good quality olive oil and 1 tsp Delicias baby capers (be sure to use baby capers as the larger ones will be too overpowering) . Strip the outer skin off the spring onion and with a pair of scissors snip it into thin slices and add to the tuna. Season the filling with freshly ground black pepper and stir to combine. The mixture wants to be slightly sloppy

Take the ciabatta from under the grill and fill with tuna mayonnaise, then return it under the grill and increase the heat to high.

Grate the cheese and sprinkle it on top of the filling making sure the tuna is covered. Return it under the grill.

Slice 5 cherry tomatoes using the bread knife, discard the ends and arrange the slices on top of the melted cheese, return the ciabatta under the grill for 30 seconds or so and serve.

    Never eaten this with capers before but I’m liking the idea. Can I add gherkin do you think?
