Ginger Beer

And we sat in the shade on a hot summers day and drank lashings of homemade ginger beer…

100g fresh ginger root
3 tbsp Acacia honey
150ml water
750ml soda water

Here’s What You Do:
Peel and roughly chop the ginger then place in a blender with the water and honey and blitz to a smooth runny paste.

Transfer the paste to a large jug, cover with cling film and place in the refrigerator for at least 24 hours to allow the flavours to infuse.
When you’re ready to serve, add 750ml fizzy soda water to the ginger paste and stir thoroughly until everything is well mixed.

Fill four tumblers with chunks of ice then pour over the ginger beer and serve immediately.
