I ditched the brandy butter in favour of this scrummy sauce. It’s light, zesty and tastes sensational (plus it’s healthier too). Try a dollop over Christmas pudding or mince pies and you’ll understand why.

Shelf Life: Eat immediately. Otherwise, refrigerate for 2 weeks but add zest last minute.
Ingredients:
500ml crème fraiche ( thick is best)
150ml dark rum
100g icing sugar
1 large orange – zest only
Equipment:
Small bowl
Fine grater
Sieve
Fork
Here’s What You Do:
Sieve the icing sugar into the bowl.
Grate over the orange zest.
Add the rum and mix together.
Fold in the creme fraiche.
Serve or refrigerate in an airtight container.
