
Mmmm… Soft, succulent squid with a crispy coating
I probably make this once a fortnight – it’s tasty quick and easy and is exceptionally good – crisp, tender squid served with a hot chilli dipping sauce. Added to this you can literally throw it together in a matter of minutes.
I know not everyone is a fan of our tentacled friends, but please don’t be put off. I’ve converted many a non squid eater with a plateful of these tender little morsels. Trust me!
A spoonful of spicy sweet chilli dipping sauce works brilliantly on the side, and by all means use shop bought in the event you don’t have any homemade to hand.
N.B: Tescos sell frozen squid tubes for £8 per kilo.
Serves: 4 as a starter 2 as a main
Preparation & Cooking Time: 5 minutes
Effort Level: dead easy
Shelf Life: eat immediately
Ingredients:
500g squid
3 tbsp cornflour
3 tbsp semolina
1 tsp salt
½ tsp cayenne pepper
Vegetable or sunflower oil
1 lemon
1 bag rocket
1 small punnet baby cherry tomatoes
Salad dressing
Sweet chilli dipping sauce
Equipment:
Large frying pan
Plastic food bag
Kitchen towel
Slotted spoon
Salad bowl
N.B: Don’t fry too many squid at once or the oil will drop in temperature making the squid soft and soggy
Here’s What You Do:
Defrost the squid, if using frozen. Pull the tentacles out from the tube then slice each tube into 1cm thick rings. Tip the semolina, cornflour, cayenne and salt into a food bag and throw in the squid. Toss well to coat.
Make a salad dressing if you don’t already have any.
Quarter the cherry tomatoes and tip into a bowl with the rocket. Drizzle a little salad dressing over the top and toss well, then arrange between the plates. Quarter the lemon and add to each plate.
Pour enough oil to come 3-4cm up the sides of the frying pan and place over a high heat. Add the squid when the oil is sizzling hot and fry for two minutes. Drain on kitchen towel and serve. Voila!
That’s all there is to it.

Can you do a stuffed squid recipe? We had it with pine nuts, herbs and minced beef once. I know it doesn’t sound appetising but it sure did taste good.

I don’t normally like squid, too rubbery and tasteless. But confess to being drawn to this one, like the idea of a chilli sauce. Might give it a try specially as squids so reasonable. I had no idea you could buy it at that price. Thansk for drawing my attention to it!

Yum! I like the look of this Uma, it sounds very qucik and easy to make. As for the dipping sauce we make it regularly from when you posted the recipe last spring. It’s very addictive – goes on everything!
Uma what are you doing to me? There goes the diet AGAIN. Actually we like squid eat it all the time when we’re in Spain. Your pic looks very appertising and knowing your recipes it’ll taste great too. Not like the overcooked rubbery stuff they serve in restaurants.
