Mint Sauce

You can’t beat homemade mint sauce to serve alongside roast lamb. Mint grows very easily and quickly. You can grow it either in pots or flower beds then use it in a variety of ways. Everything from sauces, to drinks, to desserts….

Ingredients:
1 tbsp caster sugar
1 tbsp boiling water
2 tbsp white wine vinegar
2 tbsp heaped fresh chopped mint – (approx 15 g mint leaves)

Here’s What You Do:
Put the kettle on and whilst it boils, strip the mint leaves off their woody stems and chop finely.
Tip 1 tbsp caster sugar into a ramekin and pour on 1 tbsp boiling water. Stir until dissolved, or whack in the microwave for 30 seconds.
Now add the vinegar followed by the finely chopped mint leaves and Voila!
