A clean and refreshing side dish to grilled fish or chicken. Perfect on hot summer days.
Serves: 2-4
Ingredients:
½ red onion
2 beef tomatoes
¼ cucumber
15g dill
Classic French Dressing
1 tsp Dijon mustard
1 tbsp sherry vinegar
3 tbsp sunflower or rapeseed oil
1 tbsp extra virgin olive oil
pinch sea salt
Here’s What You Do:
Thinly slice ½ a red onion. Peel and de-seed the cucumber and slice finely. Cut the beef tomatoes into ½ cm thick slices. Snip the dill fronds and discard the stems.
Create layers of onion, cucumber and tomato and sprinkle each layer with dill and drizzle over with classic French dressing.
Classic French Dressing: Tip all the ingredients into a screw top glass jar, replace the lid and shake vigorously to emulsify.
