Tuiles a l’orange et sesame

250g caster sugar
80g flour
Zest and juice of 1 orange
125g unsalted butter
10g ground almonds
100g sesame seeds

Baking sheet
Medium bowl
Small saucepan
Rolling pin

Here’s What You Do:
Gently melt the butter so it’s just sloppy, add the zest and juice of the orange and put aside.

Sift the flour into the bowl, add the sugar, ground almonds and sesame seeds.

Pour the orange/butter mixture onto the dry ingredients and mix well, then place in the fridge for about an hour until set firm.

Next grease the baking sheet and put aside. Preheat the oven 200c/400f/Gas 6.

Now scoop up small amounts of mixture and shape into walnut sized balls – approx 22g each then place on the baking sheet spacing them out well, pressing down lightly with the heel of your hand to flatten them slightly.

Slide onto the top oven shelf and bake for approx 8 minutes or until golden.

Take out of the oven allow to cool slightly then using a spatula take one tuile at a time and slide onto the back of a rolling pin to shape into a tuile, or drape over the bottom of a glass to create a small, shallow dish. Continue shaping them in this manner, should they start to set, return to the oven for a minute or two to soften.

Store in an airtight box and eat the same day.
