crostini with mozzarella & tomato

Invaluable for canapés and providing the perfect base for a multitude of toppings. Also good staight out the jar with a glass of wine.

Makes: approx 25
Preparation & Cooking Time: 25 minutes
Shelf Life: 2 weeks

1 long / narrow baguette
Olive oil – approx 60 ml
2 cloves garlic crushed

Baking tray
Pastry brush
Glass jar container

Here’s What You Do:
Heat the oven to 325F/170C/Gas 3

Slice the baguette thinly (approx 1cm).

Finely chop the garlic or better still rub through a microplane if you have one.

Pour the olive oil into a ramekin and add the garlic. Mix together to combine.

Dip the pastry brush into the oil and garlic mixture and thinly coat both sides of the bread.

Place the slices on the baking sheet and bake on the top shelf of the oven for 20 – 25 minutes until light gold in colour.

Leave to cool in the oven with the door ajar.

When cold store in a glass jar, the crostini will keep for several weeks.
