
Easy Peasy Tomato Sauce
Homemade tomato sauce is cheap as chips and far nicer than commercial brands. Plus it’s very quick and easy to make and is incredibly versatile. While you’re about it, why not make up a large batch and store the surplus in the freezer? That way you’ll save even more time and have less washing up!
Makes: 750ml

Ingredients:
400g chopped tomatoes
500ml sieved passata
4 fat cloves garlic
2 tbsp olive oil
2 tsp sugar
1 tsp oregano
1 tsp salt
Freshly ground pepper
Equipment:
Medium saucepan
Potato masher
Here’s What You Do:
Finely chop 4 fat cloves garlic and place in the saucepan with 2 tbsp olive oil. Place on the stove and cook over a medium heat for 1 minute stirring all the time to make sure the garlic doesn’t brown or it will become bitter.
Add 400g chopped tomatoes, 500ml tomato passata, 1 tsp oregano, 2 tsp sugar and 1 tsp salt. Simmer for 5 minutes, or longer if time permits. Longer simmering will create a thicker more concentrated sauce. Mash the sauce if you want it smooth. N.B Don’t use a blender/stick or the sauce will turn a pinky orange!
Remove from heat and season with a generous grinding of black pepper.

You are using Le Creuset there on the image on purpose, or is it just your favourite saucepan?
