Fragrant Curry Powder

You can’t beat making your own curry powder. It’s worth making just for the aroma wafting through your home. But the end result is a jarful of fragrant spice, guaranteed to zip up your food in a subtle but distinctive way. 

For starters, try adding a spoonful to my Singapore noodles – the end result is an amazingly authentic taste.

More good news – this versatile powder (suitable for all curries) is made in minutes and will last months, what more could you want?

Ingredients:
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp dried chilli flakes
1 tsp peppercorns
1 tsp tumeric
1 tsp ginger
1 tsp cloves
1 tsp cinnamon

Here’s What You Do:
Snap off the clove heads and tip into a frying pan with the chilli flakes, peppercorns, coriander and cumin seeds. Dry roast over a medium heat until fragrant.

Grind the seeds to a powder using a spice mill or pestal and mortar before mixing with the remaining ingredients.

Store in an airtight jar.
