Custard like it's meant to be

Mmmm...... mellow yellow smoothness

When was the last time you made some real custard? And I don’t mean the bright yellow, instant mix that comes out a packet! 

Homemade custard is so cosy and comforting you can almost feel it wrapping around you like a rich vanilla-scented security blanket.

The good news is, if you follow the recipe below, you’ll be amazed just how quick and easy it is to make. There’s no faffing about with double boilers, no constant stirring for what seems like an age and no fear of it curdling  either.

Basically this custard is bomb proof!

Serves: 4-6
Preparation & Cooking Time: 6-8 minutes
Effort Level: easy
Shelf Life: 3 days in fridge

Ingredients:
3 egg yolks
568ml milk
2 tbsp cornflour
2 tbsp sugar
1 vanilla pod or 1 tsp vanilla extract (Neilsen Massey is good)

Equipment:
Balloon or wonder whisk
Saucepan
Cup

Here’s What You Do:
Put the milk on to the boil with the sugar. Add the scraped seeds from inside a vanilla pod or use vanilla extract.

Tip the egg yolks into the cup, add the cornflour and mix together.

Pour a little milk onto the eggs and cornflour to slacken the mixture, then pour the whole lot back into the milk once it’s come up to the boil.

Stir continuously for a couple of minutes until the custard has thickened, then serve.
